About Carcasse*

Restaurant Carcasse is a renowned Belgian steakhouse founded by Hendrik Dierendonck, located in Sint-Idesbald and Knokke-Heist. Carcasse is built around a strong nose-to-tail philosophy, making full use of the animal while focusing on sustainability, craftsmanship and high-quality meat sourced from local producers.

The restaurant combines a raw, authentic atmosphere with refined gastronomy. Its open kitchen, dry-aging cabinets and charcoal-fired Josper oven are central to the culinary experience.
