About La Merise**

Nestled in the village of Laubach in Alsace, La Merise offers an elegant and intimate dining experience in a beautifully restored farmhouse. Since 2016, Chef Cédric Deckert and hostess Christelle Deckert have shaped the restaurant around a refined interpretation of French gastronomy, combining tradition with seasonal inspiration, technical precision and a deep respect for exceptional ingredients.

Chef Cédric Deckert’s cuisine is guided by his philosophy of “simplexity”, creating dishes that combine purity, creativity and depth of flavour. Local produce, garden herbs and regional influences are brought together with a precise and contemporary approach, resulting in a cuisine that is both thoughtful and deeply rooted in its surroundings.
