We are seeking an experienced Assistant Restaurant Manager - Sommelier to join a prestigious luxury hospitality operation. As Assistant Restaurant Manager - Sommelier, you will play a key role in overseeing daily restaurant operations while acting as the resident wine expert. The successful Assistant Restaurant Manager - Sommelier will be responsible for maintaining outstanding service standards, developing beverage offerings, and creating memorable dining experiences for discerning guests.

Key Responsibilities

Support the day-to-day management of a high-end restaurant operation.
Lead service delivery on the floor and ensure exceptional guest satisfaction.
Curate and maintain an extensive wine programme aligned with luxury dining standards.
Provide expert wine recommendations, food pairings, and tableside service.
Manage wine inventory, cellar organisation, supplier relationships, and procurement.
Conduct beverage cost analysis and implement profitability initiatives.
Deliver ongoing wine education and training to service teams.
Mentor, coach, and develop supervisors, servers, bartenders, and other team members.
Ensure compliance with health, safety, hygiene, and food handling standards.
Collaborate with culinary leadership on wine dinners, tasting menus, and special events.
Monitor operational standards, guest feedback, and service quality across all outlets.

Requirements

Minimum 3 years' experience in a similar management role within luxury hospitality.
WSET Level 2 or equivalent wine qualification preferred.
Strong wine knowledge and a genuine passion for food and beverage excellence.
Proven leadership, coaching, and team development skills.
Excellent communication and guest engagement abilities.
Strong organisational, administrative, and problem-solving capabilities.
Proficiency with Microsoft Office and hospitality management systems.
Ability to work flexible hours in a dynamic hospitality environment.
